I'd try to figure out the shortest focal length you're going to need where you're shooting. You can always crop, you can't do the opposite.

I usually only apply any noise reduction if I actually notice it being problematic.
if the noise looks colorful, I experiment with adjusting the chromatic filter. If it looks high contrast, but...
for B&W, I capture raw, apply DPP filters, maybe even tint, then post process in .... DPP...

The 'crop factor' applies to aperture in terms of effective depth of field, but not light-gathering ability - in other words, you'll have the same exposure settings at f/4 on full frame and a 1.6x...
The full frame automatically gets you more than a stop. 1.6x applies to the effective equivalent aperture.... So f/4 on full frame is 'faster' in effect, than f/2.8 on a crop sensor.
