Clicking on the little triangles next to the dialogue boxes/menus will hide or show them. Or you can use Shift-Tab to get rid of everything and get the result you're looking for. At least that's how I do it and it works for me.

Right. Thanks, but I meant full-screen; that is, will it hide the dock, and fill the whole screen? I know it works on Windows and will hide the taskbar and menus, but I'm considering a mac, and don't want to lose screen space.
Press "F" to enter into Full Screen Mode.
