This was my setup for a 10 day trip at Mt Rainier. Similar to yours. I used a small lowepro bag at my chest so my camera was easily accessible. And had my 0 series gitzo moutaineer. Carried a T2i, 17-55 2.8, and 55-250. I kept the tripod in the hiking pole carrier so it was also easily accessible. I've learned from past experience that if gear is hard to get to, I just won't use it much (or at all).

I wouldn't personally want to go any heavier for a serious backpacking trip as I think it would start to take away from the enjoyment of the hike.

I've carried my 5DIII, 24-70 2.8, 70-200 2.8 and gitzo systematic 3 series on a pretty strenuous 10 mile day hike and it was definitely pushing to limits of how much weight I'd like to be carrying.

My plan is actually to downsize for my next big trip. Thinking Sony mirrorless.
